Not your mom's turkey dinner!

Here's what you'll need...

  • 1 Sprout farm fresh turkey
  • 3 Sprigs of thyme
  • 3 Sprigs of rosemary
  • Hand full of sage
  • Half a lemon
  • Double smoked thick cut bacon 
  • 8 Yukon gold potatoes 
  • Grass fed butter salted
  • 1/2 cup of cream
  • Salt and Pepper

    Here's what you'll do...

    1. Take your fresh turkey out of the fridge and take the neck and giblets out. pat the turkey dry and preheat your oven to 350c.
    2. Cut your lemon and half and place it inside the body.
    3. Take all of your herbs and place those in the body as well. You can mix up your herbs, We used thyme rosemary and sage (a lot of sage!). 
    4. Salt and pepper the outside of the turkey. The more you season the outside the tastier that skin is going to get. 
    5. Place the thick cut bacon all over the body and legs. we are going to use that bacon later so don't be afraid of covering or even overlapping the bacon. 
    6. place the turkey in the oven and we will add a chart at the bottom of cooking times for the turkey. We are not stuffing the turkey resulting in the turkey cooking a lot faster.
    7. Potatoes will go in a boiling pot of well salted water. 
    8. Poke the potatoes with a knife to check when they are cooked completely. 
    9. Once the turkey is done take out of the oven and let it rest! remove the bacon and chop the bacon into little bits (maybe save yourself a strip).
    10. Drain the potatoes and mash them with the chopped up bacon and some cream and butter.
    11. Carve the turkey and plate. You can also use some of the left over turkey juices and a simple au jus gravy. 
    12. Finally, enjoy!
